I'm really after some pointers for statistics, in particular crime. I'm going for a 0 crime playthrough but there's some annoying bugs that mark quest items as stolen.
I found them dynamically but i think they're broken down via different base pointers not just one.

You can finish those quests without looting items. When I did a playthrough with no crime, no loot, no farming I had only problems with looting bandit camp leader quest items. Maybe it will be helpful for you.
As for pointers: I never looked at them, so really can't say you anything about it. And I don't think I'll have time soon for that stuff, I started a new game with no stealing (except if needed for quests) since 1.4.1 patch came out and new version of Ultimate Realism Overhaul mod ^^.
Spent quite some time to make this universal table. Now it has all cheats working for all versions of game. Tested on 1.2.0-1.4.1.
Cheats include:
Stat, Experience, Level, Skill points, Reputation, Dice, Teleport.
Scripts include:
Infinite Health and Stamina, weight, XP multipliers (x2-x100), max charisma, 0 vis, 0 con, 0 noise, armor weight not affecting speed.

Download a table you're interested in.
Open that table using Cheat engine
In cheat engine press Select process to open and chose the game process: Kingdom come: Deliverance.
Start using the table by chosing and activating cheats you want.
Additionally you can find on google plenty of guides how to use cheat engine.

Maybe you paused the game before activating the table and never unpaused it while trying to use the table? That was the only scenario for stats not showing up.
