I did find an address where the name is (I think) and if you go into memory view, you can edit the name directly in there. I don't know whether there are any dependencies anywhere that would break if you edit it this way
Memory view > Goto address (Ctrl + G) > Paste METAPHOR.exe+2C8B47C. You see the string on the right side and replace the characters there. I think it supports up to 10 characters, 4 bytes apart.
EDIT: He's called "Travelling Boy" before you give him a name, which is more than 10 characters, so you might be able give him bigger name even though the game doesn't allow that normally. The player name you enter when starting a new game (before you name the MC) starts at METAPHOR.exe+2C8B4C0 and is also supposed to be 10 characters.

Even with script editing there is an upper limit on the demo that is the town. I was moving on with the Merchant Arch mission and got to a point where it just hit a loading screen because the map for the area doesn't exist in the demo. So I guess with a script edit you can finish the dungeon, and that's pretty much it.

How did you find the name? I tried searching on my save with hex codes for letters, searching with AOB, and nothing came up both times...

To be honest, I didn't actually find it. I only stumbled upon it as I was searching for the Royal Virtues. I found one of the virtues and then opened up the memory viewer since I figured that all the virtues were close together, and I happened to notice the name a few lines down.
I am also a complete novice at cheat engine, but it's easy enough when everything is static values.

I've got a feeling we should keep this stuff a bit more not so public eye until release..
EDIT: Hahahahaha, I feel bad for the devs but I called it. I hope it doesn't discourage them from releasing future demos, they just need to actually code the game build as a demo and not the full game with limited resources.

you have to unpack the cpk file, but cnut is compiled and encrypted squirrel lang, and i cant find a way to deencrypt or uncompile them. Seems like its squirrel 3.x?

I'm in the same boat. Managed to unpack cpk and find the files, but no dice trying to decrypt the cnut files...
Wish our anon could share those files fixed (or the whole cpk cause why not).
And you know... It seems windows store version is already preload.
