They seem to be hard locked at some numbers and even if I sell all of the items that I have, it still stays at an incorrect number I have in my inventory. For example, I always have 4 iron and when I sell it or use it for alchemy, it's still at 4 no matter what. How can I reverse this?

These effectively affected which endings you would get with x character. (Example: if RP is more than FP between x and y characters, you would get z ending).
Does this version of the game still have RP? Or did they just remove it entirely and only went with FP instead? I may have overlooked it in your table, but couldn't find anything related to RP between characters, just FP only.

I have multiple but that isn't the problem. I'm trying to find a solution to the current issue. I can always go back but I want to know what caused the issue and how to solve, not how to run away. I hope this makes some sense.

However, looked at ending data (ConstEndingEventParameter), then the RP you mentioned doesn't seem to exist.
Also, even game guide sites I visited didn't mention RP.
I see! I just looked up the info as well, and it seems they indeed did merge the values in SO2R into just Friendship points.
That makes things a lot simpler in comparison to how it used to be.

@Dhaos - I noticed your table has a friendship modifier. In the PS1 (and PSP) ports of the game, they also had RP values (Relationship Points). These effectively affected which endings you would get with x character. (Example: if RP is more than FP between x and y characters, you would get z ending).
Does this version of the game still have RP? Or did they just remove it entirely and only went with FP instead? I may have overlooked it in your table, but couldn't find anything related to RP between characters, just FP only.
Also, big thanks for the work you did on this.
I haven't played the game before the remake, so I don't know the details.
However, looked at ending data (ConstEndingEventParameter), then the RP you mentioned doesn't seem to exist.
Also, even game guide sites I visited didn't mention RP.
Would it be possible to enable a 100% crit chance on a per character basis, so not for everyone, but only on a selected character? Alternatively, would it be possible to give that ability to a selected weapon?
Why not just increase that single character crit stat to 100? Crit will be 100% and you can revert to the value you want anytime.
I tried modifying the equipment that I wanted to try, and it seems that changes can be made.
However, there are rare cases where the Pointer Address checked does not work after restarting the game, which is difficult.
The silver pendant in the image worked well.

Crit value doesn't seem to represent a percentage. Even when I set it to 255, which is the max, I can still see the difference between when that character crits and when it doesn't, so it doesn't always happen. It actually doesn't even happen often with that value.
By the way, has anyone found out what does "Power" in the "Character Data Modifier" section stands for? I tried changing its value, but nothing seems to be affected by it.
