Is it also possible to change the individual saber colors with it... or gotta wait on the cheat engine table for that?
If you mean having one blade blue and the other blade green or something similar, then no. Hope they patch that in at some point but colors are universal for now.
How to use this cheat table?
Install Cheat Engine
Double-click the .CT file in order to open it.
Click the PC icon in Cheat Engine in order to select the game process.
Keep the list.
Activate the trainer options by checking boxes or setting values from 0 to 1
you get at end of the game for another playthrough in NG+, I've tried each option in the debug menu and looked over the pointers, have you by chance seen it Akira?
Worth mentioning don't click the spoiler if you haven't completed the game yet!
i wonder how difficult a "stronger force" feature would be, eg able to force grab/levitate/smash all enemies regardless of size, and even other force users/bosses which usually are immune to force grab.
Somebody tell me what I'm doing wrong. It's about consoles. She is active. I have a debug menu. But the commands in the list do nothing unless you need more than "paste command and enter". For example, flying - whether and how to activate it.

not all commands work, I find most games dont support ghost or fly

Hmm... "patch in", you mean find a way to do it in cheat engine right?
I mean, you could somehow alter them individually in jedi fallen order...

Patch in as in UE4 modding, nothing to do with cheat engine or memory hacking. Sure you CAN do it with memory hacking but since UE4SS is a thing it'd be easier to do with directly manipulating/scripting the engine as opposed to poking it externally.
