The Game Engine is Unreal I believe.
All values seem to be either Float (HP/MP/Stamina) or 4-Byte. All values move whenever you pass through a loading screen.
You can edit the value of stacked items by searching the value in 4-Byte, picking up part of the stack, repeat search, put part back, repeat, etc...
You can find HP/MP/Stamina by pausing the game and searching the current value in Float.
Money is a single number. For example, If you have 4 Gold, 11 Silver, and 58 Copper, the value is 41158 4-Byte.
I did not check Talent Points as I just made a bunch of the scrolls that give Talent Points. However, I would assume they are 4-byte (maybe Float) and you could find them by searching the value, using some, reverting the points, searching, etc...
