If you have the slightest idea on how to use Cheat Engine, you should be able to find it. It took me a few goes to get it.

Example

Your serve is 30

Scan for "30" in CE.

When you complete training and your serve has gone up, enter that number in CE and click "Next Scan".

You might have to do it 1-2 more times but you can max all your stats very early in your career.

Or, you can switch your racket/shoes and find stats for something else.

Just a little something that can be helpful for now.

Nope. Changing racket or shoes does not work. It seems to be only based on basis stats.

Not sure if this will work for you guys, but I managed to change all my skills after a gruelling process.
I first took off everything I had, so I had just my base skills. This left me with 32 backhand. So, I started my scan with 32 and clicked next scan a few times just to get rid of any crazy values.

I then skipped a few events and went straight into training. Completed training, and got 36 backhand. Clicked next scan, it came up with maybe 8 addresses, went through them all and managed to find the right one. To get it to change on screen, go into your rackets and it should auto update the value in game for you.

I then repeated the process for forehand and noticed the addresses were similar, I started to search values for my other stats and find any addresses that started with '273D9A9Bxxx'. This worked out every time to be the correct addresses. Not sure if they're static or not, I'm kinda new with cheat engine so not 100% but just wanted to help you all out if I could.

I have uploaded the table, hopefully it works for you too. But if not, above is a tutorial on how you can get the same result. Honestly, I won't be able to answer many questions if your having trouble as I am a total noob, but just an impatient noob that wanted my skills maxed!

EDIT:
I have re-tested the table on my own save, seems the values do change on each launch. I'm not really sure how to add pointers, so unfortunately the table is a waste of time. Still, with the method above, you should get success on editing your players values.
