Here is my little guide on how to overcome CE problems in GI. First you need to rename the file inside the game mhypbase.dll to mhypbase.dll.org
Rename CE cheatengine-x86_64.exe to svchost.exe
Uncheck "only reading " in GenshinImpact 2.6 table 2022-04-05.CT as well as inside the game GenshinImpact.exe.
I also disabled the mhyprot process (if you do not disable it, there will be no pictures in the CE process)

There's been a bit of mild misinformation going on here in this topic lately.
In the end that's not helping other people.

sorry i dont quite understand the svchost.exe / crss.exe thing do i have to rename?

I prefer a copy instead of renaming the original
because then things like file associations/menu items will still work
But that's a personal preference
so what to do:
* make sure View Option: "Hide extensions for known file types" is off
- goto your CE installation folder
- make a copy of the correct, for your cpu architecture, cheat engine executable (probably): cheatengine-x86_64.exe
- then rename that copy ( cheatengine-x86_64 - Copy.exe ) to svchost.exe
- create a shortcut from that svchost.exe and put it on your desktop ( for example )
- use that shortcut to start CE for the Genshin Impact table
** ofcourse your installation dir can differ from mine ** instead of a copy you can also make a hardlink
