PLEASE NOTE
In order to use the stats and the inventory editor, what you need to do is:
1. start the game and load the save
2. back to CE select the process and load the table
3. enable the scripts
4. go back in game and pause it in order to show the menu with the characters
5. back to the table the values should now be loaded (the values should show no more the ?? but numbers)

Please note that during a battle, every change to the character's stats won't be applied.

All the values that can be changed in the inventory editor, are the possessed quantity of that particular item.

Very nice, I remember playing this back on my dreamcast way back when. I didn't see but does this table come with a money option?

Most of the content in the table posted in the OP is no longer working. I've been working on a table myself for the latest version of the game (Steam) as well. Keep in mind that this will probably break the moment a new update comes out, but there hasn't been an update for over a year to the game, so I don't expect one any time soon. If it does come out and break the table I'll try to update it asap.

Would this work with the recent HD update since the base game is pretty much the same?

The file structure and content appears to have been entirely overhauled, still 32-bit though (Steam_api.dll and not steam_api64.dll) so at least there's that but just about the rest of the data was changed significantly even if the "HD" update from my knowledge is mostly for 16:9 support when it comes to Grandia 2 from Anniversary to HD but whatever engine or launcher they had for the games assets (Though those saw updates too.) is entirely changed which I assume would significantly alter compatibility with the existing table though there was always a chance or possibility the in-game data could have been somewhat compatible unless the developers had also opted for going for 64-bit instead. :)
