If you are using Cheat Engine version 7.3, the "Scan Type" should be changed to "Unknown initial value" for that first step.
better make a backup of the save file before do this, I am playing steam version and the tools as mention inside youtube does not fully support steam version. I try to do add XP with cheat engine cheat table then ended up lv2999. No matter how many times I add 5, it is still showing lv2999.

I was tried to figure out how to reset. Finally get this works, I should not tick the both "1 = XP" and "XP" in the cheat table.
