If is not enough, you can press L3 and R3 buttons at same time and it will show you a God Dev Mode menu, to disable stamina spending, weight, and practically all the options.

press F5 and F6 ->select player either using home or pageup, in here select playerdamagesetting set it to 255 and playerstaminasetting set 4 for no decrease or 255 (press enter and arrow up/down to change the number) many option for player here.
as for launch item acquisition screen go to option menu ->debug-> number 3 from the top of debug options, 2 from the bottom (PL) is edit character appearance, (PW) is for pawn.

I don't know if there is some documentation, I playjust played with some options, you can use this for no damage and stamina.

mm did you check the "Pawn" section?

You can upload your level by experience and then get pawns with that level, or else you can enable de auto revive stones for pawns
