I found both HP and FP easily, exact value, 4 bytes, 3-4 scans. Unfortunately, I wasn't able to find pointers, so had to do manual scans every time I started a game, and can't make a table. :(

Try this. It's got HP, FP, Atk, Def, and Maximum Items...
