They could easily change the values, or the function for gold's 4 Byte value might change everytime you relaunch the game but what I just did is using the changed/unchanged/increased/decreased search to first find the gold value (it should be 1 address that changes every time you start a run)
Here are the values for my current playthough

7 | 1075576832
8 | 1075838976
Since i start with 3 coins, i search for 1074266112, then after i get a coin (4 coins now) i search for 1074790400 and then get a address.
To up you coins just use the formula 1074790400 + (262144 * number of additional coins you want) and update the value. Would still be great if we could have a script for this. Example 1077411840 = 24 gold coins.
