Face value is 4bytes, but doesn't effect the game. I can't find values for gold or gems, I scanned 2byte, 4byte, 8byte, float, and double. And then scanned "All" just to be sure.

Gems can be found as a 4byte value (and adjusted) - when in the Barn shop I found two identical values but when changing both it worked for me. You can sell them to obtain gold.
Gold can also be found as 4byte value but it is recalculated/overwritten all the time. So I suppose a script is needed to adjust this.
