You have to use the last of the 3 or 4 riseoftheslime.exe processes and multiply the onscreen values with 2 (search for 4 bytes exact values). Doing this you can find money, hp, mana, strength and so on.
The problem is that I can't find a valid pointer or an assembler code that won't crash the game.

So cheating itself isn't difficult, but you have to redo it each time you start the game.

Keep in mind that if you change strength to something higher than your max strength, it shows the changed value but internally reverts back to your max strength. So you have to first increase your max strength.
If you change hp and max hp, it reverts back to your normal values when you kill an enemy (even mid-combat). I suggest you put booth on a hotkey for fast re-activation.
