No clue if you can actually use cheat engine in this game but since there is a completely offline single player mode i'd assume that you can.
Does anyone have any info on this game?

It's possible!.
Has easy anticheat though which i am figuring out how to disable.
PS: Is it Gears 5 or Gears of war 5 ? This has me so confused.

I think they prob are just making it easier for the box or the panel for xbox but originally the game was called Gears of war. Then there was Gears of war II. Then they went with Gears 3. So it's the same I am just old and remember the Gears of war days.

Gears 5.
On one famous site already made a trainer for offline mode.
This trainer has the following options:
Unlimited Player Health:
Toggle on and most things cannot kill you. Scripted deaths can still occur!
Unlimited Ammo:
Toggle on and most weapons have unlimited ammo.
No Reload:
Toggle on and most weapons will not need reload.
Fast Jack Ability Cooldown:
Toggle on and your powers cooldown instantly.
Unlimited Bleedout Recovery Timer:
Toggle on and when bleed out is happening, you have much longer time to save or be saved.
Unlimited Buddy Health:
Toggle on and most instances and types of buddies will have unlimited health to most types of damage.
Super Damage:
Toggle on and most enemies die instantly. Some enemies are spawned in crawling state and easy to kill as well.
Unlimited Components:
Toggle on and enter the screen where you can spend these, and then you have unlimited.
No Weapon Overheat:
Toggle on and many weapons do not overheat.
No Mounted Guns Overheat:
Toggle on and many mounted guns do not overheat.

I'll post mine later, The game is pretty easy to reverse. The "Hard Part is to get rid of EAC" which I've already done
