Values unfindable through direct scans

So, this irritates the hell outa me. I've never had much reason to do anything beyond scanning for values directly, since that tends to be more trouble than it's worth for my purposes. Lately though I've been running into games where that method is flat out useless, like not even that modifying the value doesn't do anything, but finding the value itself doesn't work. Something about modern game engines, I think.
It's been a while, but I did study compsci for a few semesters, and I have no idea how that's even possible, unless the value isn't stored in the process I'm scanning, somehow. Anyway, to get to the point: What the fuck is going on there, and how do I get around it?
