So a couple things: 1. "Unlimited Stamina" is kinda weird as it still goes down every so often, and won't go back up until I kill an enemy. 2. "Super damage" doesn't seem to work at all, I have it enabled but enemies still take the same amount of damage as they did before. 3. "Kill All Enemies" end...

I really didn't know about those options. But doesn't that stop you from winning the game's trophies? No, I tested it, they are just assists. Celeste also has this type of mode.
