How to use this cheat table?
Install Cheat Engine
Double-click the .CT file in order to open it.
Click the PC icon in Cheat Engine in order to select the game process.
Keep the list.
Activate the trainer options by checking boxes or setting values from 0 to 1
That being said I would love to see the item rarity mod fixed, as it is my favorite thus far. But im not complaining, I dont have the knowledge or skill to do so myself.
Just drop an FF FF Luck stat on one of your accessories. Add an FF FF Equipment Droprate too if you want loot fountains.

It also seems that with the niohK table (only one that seems to work for me at this time) the last selected equipment option is broken so i dont know how i would get the base address to do any editing.

You DO know that you can set "Show pickup text for items of X quality" in Nioh as well, yes? Omly thing, with an overcharged Luck (or a luck build for that matter), all items are of divine/ethereal quality, and you can't turn off divine pickups.

Last Selected Item should work as well, only you need to select the item from the Items menu (2nd tab), not the Equipment one. Alternately, you can immediately find your item (if it's the only one of it's kind in your inventory) by searching the ID pairs. There should be a list somewhere in this thread; find your item ID (0000XXYY), and search for Array of byte YY XX 00 00 YY XX 00 00. The green result is the start of your item; then you just need to navigate to the right bytes and change what you need.
None of the tables/script seem to work for me albeit a few options (health, ki, gold, amrita)
Nothing else works, I'm assuming my game version is EU as I live in the UK. My games updated to version 1.21.03 Steam Version
I'd really like to edit my items more so than anything else.

It still works, the item rarity script here is flawed
But this is not the fix we are looking for. We could say it's a temporary workaround. CE script is way superior to the fearlessrevolution's trainer. First of all, we are able to set custom value by modifying the script itself. I hope that someone will find the solution.
I had noticed that Money Gained Multiplier script (1.21.02U2.CT) is also broken, I'm not talking about the Booster script.
. Do I need it on all 7 pieces?
