With that being said, I am also glad Capcom has got up to date with all these RE Engine games as well. The Fov adjustment options are definitely more than welcome. But to me it's still not super adjustable, and you can't change it in the config files. So I made this small table so you can modify even more then what's possible! But it's very barebones right now so don't expect much.
The lowest field of view option in game is 90, while the highest is 110. With this table you will be able to tweak it to whatever you want and it will save as long as you do it in the camera options menu, and follow these simple instructions:
1. Open Cheat Engine
2. Run RE4 Remake
3. Put game in windowed mode with a low enough resolution to the game screen and the cheat engine app visible
4. Attach Cheat Engine to game then open the fov table and my codelist should pop up
5. Go to Camera options and go down to field of view
6. Right click the fov code on the codelist and click find out what writes/accesses this address
7. Adjust the field of view option in the camera options and the fov value should appear in one of the results between 91 and 110
8. Double click that address and then change it to whatever value you want
9. You now have that Fov value and it should be saved until you change it again

How to use this cheat table?
- Install Cheat Engine
- Double-click the .CT file in order to open it.
- Click the PC icon in Cheat Engine in order to select the game process.
- Keep the list.
- Activate the trainer options by checking boxes or setting values from 0 to 1
