i know this is crazy but i was able to permanently keep my wins and it even shows on the leaderboards LOL
i have no idea how this happened since i was just playing around with them but now i'm very very curious since if you can do that with wins
maybe you can do it with levels..
How to use this cheat table?
Install Cheat Engine
Double-click the .CT file in order to open it.
Click the PC icon in Cheat Engine in order to select the game process.
Keep the list.
Activate the trainer options by checking boxes or setting values from 0 to 1

I'm sure there is a way to permanently keep your level. Though it might just be linked to a completely different address and is probably a lot more time consuming to acquire.
I added AOB Scans for all the values to the table and merged my table into yours, Lolopan.
The AOB Scan should be working on future updates as well.
I also added "Max HP", "Normas (1=Beginning, 5=Win)" and "Roll needed to revive".
Ya know, I didn't actually expect this to happen but thank you regardless.

I'm not so sure about that, it would make sense to keeps wins and level serverside,
since they are tied to online play and can only be changed by online games.
What happened to bonbonny though is a mystery, but you don't get any more fun out of the game by keeping a fake level and win counter,
so I'm not that interested.
If you want a challenge, go find the function that changes characters and inject it, so it changes to any character you want.
->DLC Characters for free
That should be entirely possible but also kind of time consuming^^

I hope I didn't take away your fun in looking for these addresses after every update?
Supposedly, most of the game is clientside. So in a sense, keeping select values permanent only last for the update it's on. Though there's a stray chance that it'll be permanent through all updates but it would be a lot more apparent that you edited these values if they don't match with your playtime anyways.
Also, about DLC, I'm fairly certain that the process for getting them for free is a lot more time-consuming and is very... Awkward to pull off.
PS: It's fine, I think it's a lot better to have an automated table in all honesty.
The values seem fixed for me but one thing I always notice, the addresses are green, not black so it helps in identifying their patterns.
Also, the level is not permanent but it does allow you to buy everything that requires a certain level. You do get to keep the stuff you buy so don't fear wasting your stars!
I took a gamble finding these as I put every green address in the address list in and started editing them with like random unique numbers like 12 14 16 18 so that if I stumbled upon one, it was easy to identify what edit went to what value.
